Theme Thursday.....PRODUCE

Baked Avocado Fries

I saw this picture on Pinterest and being an avocado aficionado, or something like that (choking on laughter here), I felt I just had to share this production with y'all.

And being new to Pinterest I have found that it takes a lot of research to find the original post and hence found the picture post is different than the recipe post.

But the way I see it, I am thankful for all those people who reposted this recipe and picture so that it ended up on Pinterest and into my view sight, which now brings it into yours.

I mean, seriously, is there any other type of produce that is better than an avocado?

Baked Avocado Fries

Recipe Adapted from Sunset Magazine

Canola oil for frying
1/4 cup flour
1 tsp kosher salt
2 large eggs, beaten to blend
1 1/4 cups panko (Japanese bread crumbs)
2 firm-ripe medium avocados, pitted, peeled, and sliced into 1/2-in. wedges

Grated Parmesan for serving (optional)

1. Preheat oven to 200°. In a medium saucepan, heat 1 1/2 in. oil until it registers 375° on a deep-fry thermometer.

2. Meanwhile, mix flour with 1/2 tsp. salt in a shallow plate. Put eggs and panko in separate shallow plates.

3. Sprinkle the avocado slices with the remaining 1/2 tsp salt. Dip each slice in flour, shaking off excess. Dip in egg, then panko to coat. Set on 2 plates in a single layer.

3. Fry a quarter of avocado slices at a time until deep golden, 30 to 60 seconds. Transfer slices to a plate lined with paper towels. Keep warm in oven while cooking remaining avocados. Sprinkle with salt and a little grated Parmesan.

BAKED AVOCADO FRIES

1/4 cup flour
1 tsp kosher salt
2 large eggs, beaten
1 1/4 cups panko (Japanese bread crumbs)
2 firm-ripe medium avocados, pitted, peeled, and sliced into 1/2-in. wedges

Grated Parmesan for serving (optional)

Preheat oven to 450.

Coat avocado slices in the four, then egg, then panko. Spread on a cooling rack that has been sprayed with non-stick spray, then place on a cookie sheet. Spray the top of the wedges with olive oil and sprinkle with salt, then bake for about 20 minutes at 450, or until they are golden brown (I turned my oven up to 500 for the last 5 minutes).

  1. um ok i will be honest, this does not sound appealing...i like avacado but this is just a bit weird...ha...i do like sweet potato fries though....hmm...i might try it...

  2. I tasted these once at a Mexican Restaurant and have never seen a recipe for them. They are so gooooood! Also from what I could gather from the comments I read, those that have had them think they taste awesome. I guess it is like Fried Green Tomatoes, some people love them and others hate them. I have made them for people who swear they hate them and then they cannot get enough. I think you just have to know when the tomato is just right, and I would think that it would be the same for the avocado, not too hard, not too soft, it has to be just right.

    Also I am sure that when the Japanese heard that someone was putting avocado into a sushi roll, that they thought it was crazy. But I hear it is delicious. If they would just take out the crab and the fish then I might would eat it.

    I never try but Im sure is delicious sometimes I make my sandwich with chicken and mashed avocado and heat at microwaves or oven, is amazing so I trhink this is nice!!!
    Avocado is mutifacetic (lol)
    I made an Ice cream sometimes and was lovely!

  9. Oh Yum! So glad I stopped by today. I am definitely going to give these a try! Isn't Pintrest awesome? I have a love/hate relationship with it. I love it, but hate how much time I can spend on it. But, can't wait to get back on it! I may need counseling!
